Caramel Popcorn

Making caramel popcorn is easy and can be done right in your home. Within a couple of hours you will have delicious buttery caramel popcorn.

Ingredients;
1 cup unsalted butter
2 cups brown sugar
1/2 cup corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vannilla extract
5 quarts popped popcorn

You will need a large tall pot ( the mixture will tend to boil up, I use a 12″ tall pot), Wooden spoon, candy thermometer , Large metal bowl, that will accommodate the 5 quarts of popcorn, 2- 1/2 sheet trays and a cooling rack, oven mitts.

For the popcorn I use a mushroom popcorn and make it in a commercial popper. You can use any popcorn you like including microwavable version.

Place the 5 quarts of popped popcorn into the large metal bowl. On your stove top at a medium to high heat add the butter to the pot. (clip the candy thermometer to the side of the pot) As soon as the butter is melted add the brown sugar, corn syrup and salt. Bring to a boil and continue to stir until the temperature reaches the hard candy stage of 310 degrees. Remove from the heat and quickly add in the vanilla extract and baking soda, mix well. Place the metal bowl on the warm surface of the stove and add the mixture into the popcorn stirring to completely coat. dump the coated popcorn onto the 1/2 baking sheets evenly and while it is still hot separate and break apart as it cools. Allow to cool completely then place it into a sealed bag
